How Do I Cook Salt Pork?

Salt pork is one of the best parts of a pig. It comes from the belly of the pig. After the belly is removed, the pig is hung in a smokehouse to cure for 6 to 8 weeks. Salt pork can be cured by simply marinating it in salt, but we like to smoke it to add additional flavor. To make our salt pork, we have two smokers in the smokehouse. The first is a 250 gallon barrel-style smoker. It runs on apple wood pellets and has an adjustable thermostat. This smoker is great for smoking any meat that isn’t going to be cooked for a very long time. We use this to smoke our bologna. For our meat, we typically season it with salt, herbs, and spices. Then, we pat it dry and wrap it tightly in our butcher paper. This recipe produces 6 lbs of meat. To cook our meat, we remove the butcher paper, heat up the smoker to 350 degrees, and smoke the meat for 2.5 hours. We then remove the meat and store it in the refrigerator.
