For another, it makes for a flavorful and delicious brisket. Brining makes your brisket cook evenly throughout. Additionally, you’re less likely to end up with dried out and burned edges. To brine your brisket, first make sure to select a brine that’s appropriate for your brisket. Use a brine that’s at least 1% salt by weight. The salt in the brine is what gives the meat its flavor and tenderness. The higher the salt, the more it will be able to penetrate the meat. Brine your brisket for at least one day. It’s okay to leave the brisket in the brine for up to three days. Just make sure that the meat is covered by the brine. Be sure to check on your brisket once every 12 hours to make sure it’s covered by the brine. Remove it from the brine when you want to cook it. You can start to cook it right away, or you can wait for up to a week and cook it in the brine. I generally like to cook it in the brine for up to 12 hours, then remove it from the brine and cook it up to two hours before serving.
