All of these plants are rich in glucosinolates. Glucosinolates are compounds that are converted into isothiocyanates, thiocyanates, nitriles, epithionitriles and oxazolidines. When the isothiocyanates are converted into nitriles, the result is a compound that is extremely harmful to human health. Some other plants that can contain this compound are mustard greens, kale, cabbage, cauliflower, broccoli, bok choy, turnips, radishes, rutabaga, beet, mustard, arugula, horseradish, horseradish and kohlrabi. Eating these plants can lead to dizziness, drowsiness, nausea, vomiting, abdominal cramps, diarrhea and even death. These symptoms are a result of the poisonous nature of isothiocyanates.
