It’s never too cold to enjoy a hot bowl of homemade chicken noodle soup. To make a quick homemade chicken noodle soup you just need: potatoes (these will add a little flavor), and broth. Start by boiling the water in a medium sized pot. Add 1/2 pound of peeled, diced potatoes. Once the water starts boiling, reduce the heat to a simmer, cover the pot, and cook for about 15 minutes, or until the potatoes are soft. Remove the lid and add a 3/4 cup of water. Add a pinch of salt and some cracked pepper. Return the pot to the stove and allow to simmer for about 15 minutes, until the potatoes are completely cooked. Add about 1/2 cup of chicken broth, and allow to cook for a few minutes. Sprinkle in some more salt, pepper, and cayenne pepper. If you have some whole milk leftover, pour a little over the top. If you’d like, you can serve this soup with a hard-boiled egg.
