I decided to try and recreate a popular Mexican dish from my childhood that was delicious but not exactly healthy. I was working on some adjustments and testing ideas and came up with this one-pot dish that features all the flavors and textures you’d expect to find in a traditional Mexican rice casserole.

Prep Time : 5 minutes
Cook Time : 45 minutes
Ingredients
1 large onion
1 clove garlic
1 pound carrots
1 pound zucchini
1 cup creme de cacao
1/2 cup heavy cream
1 tablespoon vanilla
1 teaspoon cinnamon
1 cup basmati rice
1 14 oz can diced tomatoes
1 15 oz can black beans
2 cups vegetable broth
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 tablespoon chopped parsley
In a skillet saute onion in 1 tablespoon oil over medium heat for 5 minutes. Add garlic and saute until fragrant. Add carrots and zucchini and saute for another 10 minutes. Stir in creme de cacao, heavy cream, vanilla, cinnamon, and salt. Bring to a boil, then reduce heat and simmer for 5 minutes. Add rice and cook, stirring for 5 minutes. Stir in tomatoes and simmer for 5 minutes. Add black beans and vegetable broth and bring to a boil. Cover and simmer for 20 minutes. Stir in spices and parsley.
