This is a vegetarian mexican casserole recipe that can be served as a main course or side dish for any meal of the day. I made this dish as an appetizer and had some leftovers. I have not counted them but I think I have enough for at least 3 meals. For other options check out my recipe index.

Do You Eat Spaghetti?

I have always been a huge spaghetti fan. It has a great taste and you can eat it with just about anything. Although a regular type of spaghetti can be a bit boring, spaghetti squash makes for a great alternative. It is a great vegan and gluten free pasta substitute. In this recipe, I will be using spaghetti squash as the pasta instead of spaghetti.

How Can I Make It More Delicious?

You will be surprised to know that I have been eating vegetarian for a long time but lately I try and include meat because we have to have some meat in our diet. I think it’s even more important that we eat something that is healthy and meat is no different. That is why I decided to make some Mexican casserole for our weekend dinner. I made it with black beans instead of white ones and some other spices and herbs that I love. I hope you enjoy it!

Do You Eat Salad?

If you asked a group of people what they think is the healthiest way to eat, what would they tell you? You know what I would say? “Vegetarian!” Of course, I’d be wrong. The standard American diet is pretty bad for you. It’s high in red meat, refined carbs and high-fructose corn syrup. And guess what? Salad is the healthiest way to eat. A study published in the Annals of Internal Medicine found that people who eat a diet that’s high in vegetables and fiber tend to live longer than those who eat a diet high in calories, processed meat and refined carbs. “Eating a diet rich in vegetables and fiber might help you live longer,” said co-author Dr. Timothy Church. “And that is good news!”
