These pancakes are made with the same ingredients as the vegan eggs but use a vegan flour to make the pancakes. This recipe uses almond flour, but if you can’t get almond flour you can use other similar flours. These pancakes are delicious and so much easier to make than regular pancakes. You will need:
1 cup flour
½ cup almond flour
½ cup pumpkin seeds
½ cup sunflower seeds
2 Tbsp cornstarch
½ cup almond milk
1 tsp salt
2 tsp baking powder
2 Tbsp vegan butter
2 Tbsp brown sugar
2 Tbsp vanilla
2 Tbsp molasses
2 Tbsp banana
A few cracks of fresh nutmeg
Toast the pumpkin and sunflower seeds in a 350F oven for 5 minutes. Once they are toasted you can grind them in a food processor. If you don’t have a food processor you can use a rolling pin to grind them. You can grind the other ingredients in the same food processor. Once the pumpkin seeds and sunflower seeds are processed add the dry ingredients. In a large bowl combine the almond milk, vegan butter, brown sugar, vanilla, molasses, and bananas. You can also add the almond milk, butter, brown sugar, vanilla, and molasses to a large mixing bowl and stir to combine
