In this video I make vegan corn chowder with potatoes. This is a very healthy and filling dish.
Ingredients
Vegan Corn Chowder Recipe
1 tbsp extra virgin olive oil
1 carrot, chopped
1 large onion, chopped
2 stalks celery, chopped
1 large potato, chopped
2.5 cm piece of ginger, chopped
1 clove garlic, chopped
1 cup corn kernels
1 cup potatoes, chopped
1/4 cup soya sauce
1 can of vegetable stock
Salt and pepper
Method
Heat oil in a pot.
Add the onion, carrot, celery, potato, ginger and garlic and fry for 3 minutes
Add soya sauce, stock and salt and pepper.
Add corn kernels and potatoes and stir well for about 5 minutes
Dish up and enjoy.
