ive been making stuffed shells with my grandmother for as long as i can remember. she would never go to recipes, but always got her way with an ingredient list on the side of a napkin tucked inside the empty shell box. when i started to learn to cook and bake, she would give me recipes to make for her, but i would always take them in another direction. i am so glad i did! because i found my way to a delicious recipe with a twist. this is inspired by her stuffed pasta shells. i never ate them as a child, but i remember her making them a lot in our family, so i find it funny that i can now make them for my kids to enjoy.
