With a few pieces of avocado, lychee and passion fruit, in addition to this gastronomic mollusk, the chef achieves a fresh and surprising bite. You will have it ready in minutes!

1. To open the oysters, stretch out a folded cloth, place your thumb under it and place the shellfish on top. Go over the cloth so that the oyster is completely blocked and the finger is covered. Poke the knife through the hinge part all the way in and twist it so that you remove the rib. Open the oyster, cut the nerve completely and that’s it.
2. Take a very ripe avocado and cut a piece. Remove the shell and cut it into small squares. Now take a lychee, remove the skin, remove the bone and cut it into small wedges.
3. Place the avocado pieces and a few strips of lychee on top of the oyster, more or less the same amount. Dress with a little lime juice and add a few drops of chipotle or another hot sauce, a little sesame oil and a tablespoon of passion fruit pulp.
