Ribs are the body part that makes us laugh out loud. It is good that we have them for that reason. It is not good when it happens to ribs that the meat become so dry and hard that you cannot really eat it. It can become also very dangerous for the health of the person who eats it. It can cause various health problems like gastric pain, loss of appetite and even death. At the end of the day, it is all about the way the ribs are cooked. The more the internal temperature of the meat, the more the liquid is boiled out, thus tenderizing the meat.

When I was a kid and made ribs I would wash, salt, rub and bake them. I would cook them for 4-5 hours at 350 degrees. Then, I would rinse them and dry them with a towel. Now I cook them at 350 degrees and then let them rest for 20 minutes. It takes about 40-45 minutes for the ribs to cook to my liking. This helps bring out their flavor.

How to Cook Ribs

A good way to cook ribs is to stick them in a pan or slow cooker for a few hours on low heat. Cook them for a couple of hours, then allow them to cool for a couple of hours. This way, they will be less likely to dry out. Keep them in the refrigerator overnight to give them time to set up. Ribs need to be cooked with their bones in to make them more tender. If you have tough ribs, you can’t really expect them to be tender. So, either cook them with their bones or remove them before cooking. Some people like to cover them in a simple basting liquid, but this is a lot of unnecessary work. You can use barbecue sauce or teriyaki sauce instead. However, the best type of basting liquid is a mixture of half water and half white vinegar. This will help to keep the flavor of the ribs.

What Temperature Should They Be?

Ideally, the temperature of your ribs should not exceed the following point. When you’re first cooking your ribs, they are going to be a little too hot, so the actual temperature at the core is not going to be anywhere close to this point. However, the outside is usually just right, so when the time is right, you should take them off of the heat, and let them rest for 10-15 minutes or so. You can also take them off the heat and let them rest in an oven or microwave for up to 20 minutes, depending on the temperature of your oven.

Keep Them Covered With a Pan

To keep the ribs covered with a pan, they need to be at a certain temperature to slow down the evaporation of the meat juices. The pan should be big enough that it is able to cover the top of the meat. This will prevent a lot of juices from escaping. The ideal temperature for beef ribs is 145 degrees Fahrenheit. This will be high enough to kill off bacteria that can cause botulism, while low enough that it doesn’t dry out the meat.
