Sweet Potato Pecan Pie?

Today I made a really delicious sweet potato pecan pie. I had a bunch of canned sweet potatoes sitting in the back of the cupboard for a while, and I really wanted to make something with them. I was inspired by some recipes I found online. I hope you like it!

How to Make The Pie

Here’s the thing, I’m not really that great at baking pies. I’m sure that’s part of why I have so many of them in my Pinterest account, but not too many actually turn out. So I’ve had my fair share of trouble with pie dough, but with some help from my fabulous friend Meghan and her delicious sweet potato pecan pie, I finally made it. The sweet potato pecan pie is really unique because it incorporates the two main flavors of this year’s Thanksgiving dinner: sweet potato and pecan. However, if you have a weakness for pie crust, you may want to make a classic pie crust. And for a double crust, you can double the pie dough recipe or use two crusts! Either way, the sweet potato pecan pie is absolutely divine!

How to Make Traditional Pumpkin Pie

Ingredients:
3 cups whole-grain or all-purpose flour
1 cup packed light brown sugar
1 cup pumpkin puree
1/4 cup pumpkin pie spice
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup vegetable shortening
1 egg
1/2 cup half-and-half
1/4 cup pure maple syrup
1/4 cup milk
Preheat oven to 425 degrees F. Prepare a 9-inch pie shell by spooning the dough into a lightly floured 9-inch pie plate and crimping the edges.
Place the pie shell on a baking sheet. Line the shell with aluminum foil and fill with pie weights or dried beans. Bake for 8 to 10 minutes, then remove the foil and weights and bake for an additional 8 to 10 minutes, or until the shell is golden brown.
In a large bowl, whisk together the flour, brown sugar, pumpkin pie spice, baking powder, and salt.
In a small bowl, combine the shortening and half-and-half.
In a small bowl, whisk together the egg and maple syrup.
On low speed, add the shortening mixture to the flour mixture and mix until a soft dough forms.
Remove the crust from the oven. Pour the egg mixture into the crust and use a rubber spatula to spread evenly.
Return the pie to the oven and bake for 15 to 20 minutes, until the edges are golden and the center is set

Why is sweet potato pie great?

Sweet potato pie is a great dessert to make when you’re short on time or out of ingredients. Since you can make it with ingredients you probably have on hand, this makes it an easy recipe. Plus, this recipe is super healthy. Sweet potato pie is a great way to get in some extra veggies. The pecans also add protein and healthy fats to this pie. And, of course, this pie is delicious.

Dessert Worthy

I’m not a big fan of pie, but this is one dessert I’ll make an exception to. It combines a classic comfort food ingredient with a more exotic one, and it’s just the right amount of sweet and pie-y. This pie is suitable for any time of the year, but I really like it when the temperatures drop. The pears and pecans really make it. I think the most unique aspect of this pie is that it has cinnamon in it. I love how this changes the cinnamon flavor, and it really makes the pie.
