1 lb potatoes
2 large onions
1 teaspoon ground coriander
2 teaspoons ground cumin
2 teaspoons ground ginger
2 teaspoons kosher salt
3 tablespoons olive oil
1 tablespoon freshly squeezed lime juice
1/2 teaspoon freshly squeezed lime juice
1/4 cup diced red onion
1/4 cup diced red bell pepper

How to Make
Preheat oven to 350° F and get a large oven safe pot or Dutch oven. In a medium sauce pan heat the oil. Add the garlic, chiles and cook until fragrant, about 30 seconds. Stir in the cumin, red pepper flakes and 1/4 tsp. of salt. Add the potatoes and 1 cup of water and bring to a boil over high heat. Reduce the heat to medium-low and cover the pot. Simmer the potatoes for 20 to 30 minutes or until almost all the water has evaporated. Transfer the potatoes to the prepared pot and turn the potatoes with a spatula to coat with the spices. Cover the pot and bake in the preheated oven for 30 to 40 minutes. Remove the lid, turn the potatoes with a spatula again and bake for another 20 to 30 minutes, or until the potatoes are browned and crispy around the edges. Check the potatoes after 20 minutes and continue to bake as needed. Serve hot.

ive been making these potatoes for a while and its one of my favorites. but i havent found a good seasoning recipe for them. everyone has a different definition of what a spiciness level is and that changes with different foods and with different types of people. so i thought i would share my recipe. these are done in a tandoor oven. I like to make them a day in advance so that they stay soft while im using them. the tandoor heats up like crazy. the potatoes and tomatoes come out awesome. they are baked in tandoor style with a little salt added for extra spice.
