Roasting a whole chicken is a great way to add flavor to your meals. To cook a chicken, you will need to start by cutting the chicken into two pieces. It is important to make sure to remove the backbone from the chicken because it will make it difficult to carve and cook the chicken evenly. After removing the backbone, flip the chicken over. Rinse the chicken and pat it dry with paper towel. Coat the chicken with oil or butter, and sprinkle the chicken with salt and pepper. Place the chicken skin side down on a wire rack and grill for 30 to 40 minutes. Let the chicken rest before you carve it into pieces.

The Technique
For these recipes, I use a cast iron grill pan. But you can use any other nonstick, heavy pan. I have used cast iron before, but if you are new to cast iron, you might want to start with a pan that doesn’t have cast iron. I love cast iron for its ability to get really nice and crisp in high heat, and it doesn’t stick to food like other nonstick pans. If you don’t have a cast iron grill pan, you can use your oven to do the same thing. Just make sure to turn the heat down low or the chicken will burn.
The Results
The results were pretty tasty. It was juicy and succulent and would have made a great appetizer or a light dinner.

Roasted Whole Chicken on the Grill
