How to Make Candied Pecans

Candy Pecans is a yummy treat that everyone loves. But there are only a few recipes for making this sweet snack. Pecans are not hard to make, but candied pecans are a bit tricky to make. The reason is that the candied sugar needs to stick to the pecans while they’re still warm, but when pecans cool down, the sugar hardens.

Then stir the mixture gently, with a wooden spoon. Microwave the mixture for 2 minutes, until the syrup is slightly warmed. Pour the sugar and molasses into a medium pot. Add the warm pecan syrup, water and stir to combine. Bring to a boil. Cook for 5 minutes, without stirring. Turn the heat down to medium-low and simmer for 3 minutes. Add the candied pecans and stir to combine. Remove the pot from the heat and let sit for 5 minutes. Pour the candied pecans into a sieve and drain

Bring the Pecans to a Low Temperature

The last step in making candied pecans is to bring the pecans to a very low temperature. This process is called “drying” and it’s important to get the temperature down as low as possible. This is called “flash-drying” and it should be done at a temperature of about 50 F, or 10 C. You will need to find a food dehydrator and a tray that is oven proof, so the oven isn’t a problem. As you have the pecans ready, get a tray that is slightly larger than the pecans. Then sprinkle the pecans on the tray. Put the pecans in the food dehydrator and put them in the oven for about 15 minutes. When you open the door, put the pecans in the refrigerator to cool. When they are cool enough to touch, remove them from the tray and place in an airtight container.
