In a medium to large roasting pan, combine the butter and olive oil and toss with the cubed meat. Sprinkle with the garlic, salt, and pepper. Add the carrots and celery. Toss to coat. In a small sauce pan, add the water and bring to a boil. Lower the heat and simmer until the water evaporates, about 10-15 minutes. Set the roast aside and cover with foil. In a roasting dish, mix the breadcrumbs, onion, herbs, and garlic and sprinkle over the roast. Add the stock and half the Béchamel Sauce and mix. Drizzle the top of the roast with the remaining Béchamel sauce. Cover with foil and place the roast in a preheated oven at 200 degrees. Cook until the meat is tender. This can take anywhere from 2 to 4 hours. Remove the roast from the oven and allow to rest for 10 minutes before serving.
