This is a great recipe for anyone looking to create a quick and easy dessert for a cookie exchange. I like to call these pecan snowball cookies as they’re quite soft inside and have a crisp outside. They’re very versatile and you can use any chocolate chip cookie recipe to create your own variation. If you’re looking for a heart-healthy dessert, make sure to replace the butter with applesauce and add 1/4 cup of oats.

I have had the most success making these with almond flour. I have also been making them with a nut-free version using oat flour, which tastes just as good. I did not make any notes on how to make these as it was rather easy. I also didn’t have many of the ingredients on hand so I just made what I had on hand.

The Consistent Consistency

I am so happy to share with you the recipe of my most loved and tasty snack today- the Peanut Butter Cookies. This recipe is based on my grandma’s recipe and is a family favorite. The consistency is amazingly smooth and soft. The recipe itself is very simple and easy to follow, but the most important part is to have fun baking cookies. It’s really fun to watch it turn into something new and beautiful. I also find a lot of joy in the moment I get to share it with my family and friends. It also gives me a great chance to practice my baking skills, baking a very delicious recipe.

Procedure

So, I wanted to create a super simple recipe that you can make in a few minutes, but still tasted delicious. We used a boxed biscuit mix that we’ve been testing lately to see how it performed, and we loved how it turned out. We kept the biscuit mix simple to make, but added a lot of other ingredients. It’s very easy to do, and the end result is a delightful treat.

Ingredients

1 cup pecans 1 tablespoon almond butter (or other nut butter) 1/2 cup coconut butter 1/2 cup unsweetened coconut flakes 1 teaspoon vanilla extract 1/2 cup oatmeal 1/2 cup honey 1 cup almond milk 1/3 cup almond flour 1 egg – optional 1/3 cup desiccated coconut Instructions
[Text]: Preheat oven to 350 F. Grease a cookie sheet and set aside.
[Text]: In a food processor, blend pecans, almond butter, coconut butter, coconut flakes and honey. Add in vanilla and process again.
[Text]: Spread the mixture into a flat cookie sheet.
[Text]: Bake in the oven for about 20 minutes or until golden brown.
[Text]: Transfer to a cooling rack and let cool.
[Text]: In a small bowl, mix almond milk, almond flour and egg together. Mix well.
[Text]: Mix in desiccated coconut. Spread the mixture on top of cooled cookie, and sprinkle with more desiccated coconut.

I used these awesome dough recipes. I love them. Super easy to make and they’re packed with protein, carbohydrates, iron and vitamins. And they’re made from real foods. I used pecans because they’re in season now and they’re loaded with good fats, protein and iron. Topped with my homemade sweet vanilla coconut glaze, they’re good for you and they’re really easy to make. This is going to be a new go-to treat for us.
