How to Make Cream Cheese and Peanut Butter Muffins

I love to bake, but I don’t have a lot of time to do it. I feel bad because I know that I’m depriving my husband and kids of the yummy treats that they deserve. Luckily, it is easy to make your own cream cheese and peanut butter muffins and they are packed with protein, vitamins and minerals. I got the idea from my wonderful husband who bakes his mom’s excellent muffins and I can’t wait to try it out. I have updated the recipe below so it can be easily adjusted and it makes up to 12 muffins.

[Text]: Ingredients 1/2 cup nonfat Greek yogurt (or regular yogurt)
1/2 cup smooth peanut butter
2 tablespoons honey
1/4 cup whole milk
2 eggs
1/2 cup finely crushed pecans (or more if desired)
1/2 teaspoon vanilla extract
Directions: Preheat oven to 350 degrees F. Grease or spray muffin cups with cooking spray. In a large bowl, whisk together the yogurt, peanut butter, milk, eggs and vanilla. Stir in the pecans and fold the ingredients until just combined. Pour the mixture into the prepared muffin cups, filling each cup halfway. Bake for 15 minutes or until a toothpick comes out clean when inserted in the center of the muffins. Let cool for 10 minutes before removing from the pan.
