Making Pancetta With Salt

So I am making pancetta. Now when I was a little boy, I was always asking my mom to make pancetta for me. It was my favorite of all the salted prosciutto. So one day she took me to this wonderful Italian deli and bought me an early version of pancetta. And I remember being absolutely blown away. This was a slab of pork which had been rubbed with garlic and cured for over a week. It was so good, and I remember it so well. And the reason why I am making pancetta is that I want to use this basic method, but modify it a bit. So what I’ve done is I’ve taken an already-cured bacon and I’ve rubbed it with garlic, then I’ve tied it up into a bunch of small sausage balls, and then I’ve hung them up to dry. And I’ve hung them up to dry, but they’re in a humid basement, not in a very dry air conditioner. So my finished product is very moist. And I’m going to do what I like to do with pork and I’m going to fry it. So I’m going to fry up these little meat sausages, slice them, and serve it with a side of greens.
