Tips on how to roast a chicken

The best chicken to roast is a free-range chicken. The chicken will be tender and juicy. You can cook the chicken at 250 degrees for 40 minutes, then at 350 degrees for another 40 minutes. For the chicken to be juicy, it must be covered in fat. The fat will melt, cooking the chicken, and is also a flavor for the chicken. The other main way you can make the chicken juicy is by rubbing it with salt and pepper. Chicken should not be salted before roasting. The salt is for cooking, and will wash off as the chicken cooks. You can also rub the salt and pepper into the chicken skin. Make sure you have a flat bottomed pan for roasting. This will protect the chicken from the bottom from getting too hot. You can use a broiler or oven, but you need to make sure that the pan is at least 6 inches in diameter. This will allow the heat to reach all sides of the chicken.
