Ingredients: 1 cup of mexican sweet corn, diced small 3 tbs olive oil 3 tbs lime juice 4 tbs of white vinegar a teaspoon of cumin a dash of salt to taste 1/2 cup of avocado 2/3 cup of cilantro chopped 2/3 cup of corn kernels 1 tbs of canola oil 3 tbs of chopped pecans or peanuts

Today’s recipe is a classic mexican sweet corn salad. It’s great for picnics or served as a side salad. This salad is colorful and packed with nutrients. This salad has three important components: corn, bell peppers, and red onion. The corn in this salad is julienned. It’s the same as corn that has been steamed, but julienned cuts the corn into strips. It adds a nice crunch to this salad. Next, we have the red onion. It’s sliced thin and adds a nice tangy and sweet flavor to this salad. The last main ingredient is bell peppers. We’ve chopped them up and mixed them into the salad.
