I use a spicy little ragout that I make for hamburger a lot and it is the best it can be with little work.
Mezcal Pork Meatballs
Ingredients: 1/2 pound ground beef 1/2 pound ground pork 1 cup diced potatoes 3 tablespoons mezcal 1/4 cup chopped cilantro 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon ground allspice 1 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon ground cinnamon 1/4 teaspoon ground cayenne pepper (optional) Cook’s notes: Take the spices and pound them down, so they are evenly distributed on the meat. Season them with salt, then let it rest while you prepare the filling. Heat up a pan with olive oil. Add the meats and cook them until they are brown, breaking the meat up with a spoon. In a bowl, add the potatoes, mezcal, cilantro, cumin, coriander, allspice, cinnamon, and cayenne pepper. Mix them together. Use a scoop to fill the meatballs. Put the meatballs in the pan. They should be on a medium-high heat. If they start to stick to the bottom, add a few drops of olive oil. Cover the pan with a lid and let the meatballs cook for about 15 minutes, until they are tender. Place the lid back on the pan and cook for another five to ten minutes. Serve the meatballs with your favorite dipping sauce.
Mexican Ground Beef And Potatoes
Mexican ground beef and potatoes combination. This is not my idea. It is true. You can cook ground beef and potatoes together. You need to cook it like this: Put beef into a pot and cook the beef without stirring. Add potatoes and 1 teaspoon salt. Stir the ingredients. Then cover with water. Bring the water to a boil. Reduce the heat and simmer for 30 minutes or until done. You can use a slow cooker for this. Let cool. Then put into a big bowl and mash. Serve and enjoy your food. I love this dish. I make this dish frequently.
