To get around this, I use a store bought marinade. For this recipe, you can use any marinade you like. But I chose a new mexican chicken marinade from mexicankitchen.com. It has all the right flavors to make a delicious marinade. For this recipe, you’ll need: • One 8-ounce can tomato sauce • One 8-ounce can diced tomatoes with green chiles • 1/2 cup cilantro, finely chopped • 1/4 cup fresh lime juice • 2 teaspoons chili powder • 1 teaspoon salt • 1 teaspoon pepper • 1/4 teaspoon cumin • 1/4 teaspoon cayenne • 1/4 teaspoon garlic powder • 1/4 teaspoon chipotle chili powder • 1/4 teaspoon allspice • 1/4 teaspoon dried oregano • 1/4 teaspoon dried cilantro • 1/4 teaspoon hot sauce • 1/4 teaspoon black pepper

I’ve been making this meal for a few years now and it’s one of our favorites. This marinade will work great for a variety of meats. I have used this recipe with chicken, ground beef, salmon, and even pork. I recently made a large batch and froze it in individual portion sized bags so that I could have it ready whenever I wanted.

Ingredients: 1/4 cup of olive oil. 1/4 cup of balsamic vinegar. 2 tsp of cayenne pepper. 2 tsp of garlic salt. 2 tsp of onion powder. 1/4 tsp of pepper. 1/4 tsp of salt. 1/2 cup of pineapple. 2 chicken breasts. 5 chicken legs. Directions: Start by marinading the chicken for 2 hours or until chicken is fully cooked. After marinating, take chicken and mix with rest of ingredients. Cover and let sit overnight. Preheat oven to 425 degrees. Bake chicken for about 40 minutes.
