In Japan, some people prefer to eat only fish that’s been cooked, but masago is made from a type of fish that’s firm, but not necessarily completely raw. The ingredients can be added to the sushi rice at any point during the cooking process, but they’re typically added towards the end of the process. During this process, the sushi chef adds a little salt, which is meant to soften the fish and keep it from drying out. The resulting dish is usually served as an appetizer, but it can be an appetizer or a main dish. There are even some restaurants that will charge you extra if you request masago. But, not all places that offer sushi offer this sushi option.
