The first thing you’ll need to do is marinate the chicken. Combine the lime juice, lime zest, oregano, and bay leaves in a small bowl. Stir to combine, then add the chicken. Cover the bowl and place in the fridge for at least four hours. The chicken will absorb the flavors of the marinade, which will give it a nice flavor. When you are ready to cook, heat your oven to 425 degrees F. Place the chicken on a baking sheet or in a roasting pan. Brush the marinade onto the chicken.
