I love the Tuscan Chicken recipe that comes in the Cook’s Illustrated “lite” magazine. The magazine says to use any vegetable you’d like, and I chose a variety of different ones. The “lite” magazines are usually pretty simple, so they are great for someone who wants to learn to cook, but don’t want a more complex recipe that they may not be able to make.
