Goat Cheese Making

We had been trying to figure out how to get goat cheese at home for a while, until we found a really great recipe online. We were surprised at how easy it was to make and how much it was like making cream cheese. The recipe is below:
1. Place goat’s milk in cheesecloth in a fine mesh strainer.
2. Place strainer over a bowl, and let the milk sit for 20 minutes.
3. Remove the milk from the cheesecloth, and use a pasteurizing pan, or a similar container that is large enough to hold the goat’s milk, and pasteurize the milk at 145 degrees for 5 minutes.
4. Place the milk into a cheesecloth lined colander, and let sit overnight.
5. The next day, place the cheese into a second cheesecloth lined colander, and press down on the cheese with your hands to remove excess whey.
6. Place the colander into the refrigerator, and refrigerate for at least 12 hours.
7. Remove the cheese from the refrigerator, and place it onto a cutting board, along with a wide, flat serving plate.
8. Use a sharp knife to cut the cheese into 4 equal pieces.
9. Remove the cheese with a serving plate, and cut the cheese into cubes.
10. Serve the cubes with crackers, bread, toast, or bagels, or enjoy them on their own.
