Making a thick cream is an easy task if you have heavy cream to start with. Rice starch is an excellent thickener for cream because it is very light and dry. Starch is made up of large sugar molecules that clump together when mixed with cream. Starch also works very well to thicken butter, sour cream, mayonnaise and other dairy products. Use a 1/2 cup of rice starch for 1/2 cup of cream. Warm the cream by putting it in a pan over medium heat. Once it reaches 165 F, add the starch and whisk continuously until the cream has thickened.

How to thicken heavy cream

You can thicken heavy cream with things such as tapioca starch, baking powder or cornstarch. To thicken the cream in this recipe, just mix it with a couple of tablespoons of cream of tartar. This will keep it from separating. Try not to add too much cream of tartar, or the cream may get lumpy when you blend it with an immersion blender.

It’s easy to make your own heavy cream. I use a relatively inexpensive mason jar to make it in, and I add a pinch of salt to it to help make it thicker. For this recipe, you’ll need about 2 cups of heavy cream. Don’t be scared off by the amount of cream you see on the bottom of the mason jar. It will still be a lot thicker than the supermarket cream. Place your cream in a saucepan, and bring it up to a simmer. Once it’s simmering, place your mason jar on top of the saucepan, and place the lid on the jar. Turn down the heat so that the cream is barely simmering, and heat it for at least 30 minutes. Next, check to see if the heavy cream is the right consistency. Pour the heavy cream into a bowl, and if it’s too thick for your liking, you can always add a little more cream.
