You’ll want to make two more incisions inside of the tri-tip, but on the outside. You should cut all the way to the bone in order to get a nice thin slice of the tri-tip. Now, you want to cut the tri-tip into two pieces. You want to cut it in half, making sure to cut it in the middle so that both halves are even.
