You’ll also need a vacuum sealer to seal up the duck after cooking. You’ll need to first make the duck breasts. This means cutting them into smaller pieces. Then you’ll want to trim off some of the fat and skin, which you can either reserve for the confit or discard. Then you’ll want to place the duck in the vacuum sealer. You’ll need to cook it for about 30-40 minutes at 170 degrees Fahrenheit. You’ll then want to remove the breasts from the vacuum sealer. For best results, you should remove the cooked duck from the fat and store it in the refrigerator. If you’re not going to eat the duck immediately, you can freeze it. This process should be done with your own duck, so you know you’re getting the best quality.
