The brisket is one of the most frequently used cuts of meat when cooking barbecue. It requires long cooking to obtain its tender texture. A common technique is the “rub-down” method of cooking. This method starts with brushing of seasoning on the brisket. The next step is to smoke the brisket. The way the smoke penetrates the meat changes its taste and flavor. You should be very careful when smoking brisket.

Seasoning

The brine helps the meat keep moisture while slow cooking. It is also a great way to season the meat. When I ask where we keep the brine, I get a variety of answers. Some just keep it in the fridge. Others use a jar in the fridge to store it. Still others go to the freezer. I like the freezer because it is easy to move it around and it has less evaporation. You can mix up any seasonings you have in the fridge, and make a brine in the freezer. I typically use 2 to 4 cups of brine for around 2-3 hours of cooking time.

I have a pressure cooker, with the right beef brisket, and beer. I’ll go ahead and add the spices, and beer, and onions, and peppers, and salt, and pepper. And even those last two beers. And I’ve got about a quarter of the brisket.

How to Prepare Brisket for Smoker

Brisket is a tough cut of meat that is better suited to the slow cooker than the smoker. Even so, you can prepare brisket for smoking by soaking it in water to keep it from drying out. All you need to do is sprinkle it with salt and place it in the refrigerator. Make sure to rinse off the salt and pat dry. Once it’s dry, rub it with some extra-virgin olive oil. Place the brisket in the refrigerator for about two hours to overnight. It’s important to note that the brisket should be at room temperature before it goes into the smoker. This allows the meat to absorb smoke. After the two-hour to overnight soak, put the brisket in the smoker and cook it for four to five hours. After it has been smoked, it’s time to eat! You can serve it as part of a meal with brisket and beans or barbecue beans. You can also throw it in a pot of chili.
