How do you keep zucchini from getting soggy when roasting?
Elevate the Zucchinis by putting them on their own baking sheets, which allow air circulation and help water evaporation so they are beautifully cooked, without being soggier than when they were placed on paper. They are also much easier to slice. You can also use a regular oven to bake the slices, however, this will take longer. If you do choose to use an oven, make sure to preheat it before you start cooking. For the best results, bake at 350 degrees F for about 30 minutes. Once the vegetables are done, remove them from the oven and let them cool completely before slicing.
Should you salt zucchini before roasting?
Roasting zukes is great to get those extra crispiness without having to add salt. If you want to make sure that the skin is well browned, you’ll need a little salt too.
