How to Make Turkey Soup
After Thanksgiving, turkey carcass is not a thing that we need. But we still have the leftover turkey carcass in our fridge. We have a couple of ways to make turkey soup.
Mustard Greens and Dandelion Greens in Turkey Soup
Another traditional recipe I have that uses fresh dandelion greens is my turkey soup. It’s really quite simple and quick to make. But it does require a few tricks. The most important one is how to get rid of the carcass after making the soup. So, how do you do this? Well, first you make a quick stock out of the carcass. Then, you’ll chop up the vegetables and cook them in the stock. As they cook, they’ll release some liquid. When the vegetables have released enough liquid, you’ll strain the vegetables out and discard the stock. You’ll then add the vegetables back to the stock, season the soup and top it with a little fresh dandelion greens. This recipe has to be made at least a few hours ahead of time to really get the full effect. So, it’s not a recipe that you can whip up on a moment’s notice.

Turkeys are a big holiday dinner mainstay, but many families find their carcasses a little too big to use up. That’s where this recipe comes in. It’s a great way to turn your turkey carcass into soup, which is perfect for holiday dinners. First, place your turkey carcass in a large stockpot and cover with water. Next, bring it to a boil, and let simmer for about 4 hours, skimming the top as it boils. Add some herbs like rosemary, thyme, oregano and sage, and some salt and pepper.
