I’m trying to think of the last time I had a proper breakfast, and honestly, I can’t think of one. Most of my mornings begin with my automatic coffee maker. I make a cup of coffee, eat a muffin (or two, or three), and then spend the rest of my morning zoning out on my couch and watching my favorite television shows. Maybe a nice bowl of fruit once in a while, but by the end of the day, I’m so exhausted, I can’t even think about a meal. So, I’ve set out to change that. Every morning, I make a simple smoothie using frozen strawberries, coconut milk, and a bit of fresh lemon. It’s so delicious, I’ve even been known to share it with my roommates. My strawberry oatmeal is my latest endeavor to start my day off right.

I’ve been making this oatmeal for a while now and it’s my all time favorite oatmeal. It’s so creamy and yummy and its a great breakfast. The oatmeal should be creamy and slightly sweet and shouldn’t be dry. I love to add some strawberries in mine. I just use an ice cream scoop to portion out the oats then mix them up before adding the milk. Once mixed, I pour it into a bowl and top it with a bit of coconut oil, peanut butter and cocoa powder. The coconut oil is perfect for spreading around and helps it stay creamy.
