This recipe is a “gumbo” style stew. When making “gumbos”, you typically want to add some vegetables in the beginning of the cooking process. The vegetables add a lot of flavor, and help reduce the cooking time. These “gumbos” are typically fairly thick and very hearty, so you want to make sure you have some chunky veggies in the dish. This particular recipe is made with chicken, but it can also be made with beef or even a mix of meat and chicken.
