Once the cream is boiling, turn the heat down to medium-low and cook the mixture for 3 minutes. While the cream is cooking, whisk the egg whites in a large mixing bowl with the electric beater until they become foamy. Continue to whisk until the egg whites are stiff. Add the sugar to the egg whites and continue whisking the mixture until the sugar is completely dissolved and the egg whites are a medium-thick consistency.
