While I love these methods, none of them are as convenient as the oven. The oven is a great cooking tool and can really get the cooking job done well.

First, you will want to prepare your smoker or oven. You can make pulled pork in a smoker, but the best quality is in an oven. You will need to place your oven on the lowest heat setting to use it. If you have a convection oven, you can use that instead. You will also need some time to prep your pork. This can be a half to full hour before you begin cooking. The pork will need to be brined for 6-12 hours, depending on how tender you would like it to be. You should also soak your mop if using one. You can use a slow cooker or a pressure cooker to brine the pork. Now it is time to start cooking. Slice your pork shoulder into 3/4″ wide slices. You will want to rub the first side with apple wood chips. This will add flavor and smoke to your pork. You can use the rest of your apple wood chips to rub the second side of the pork. You should only cook your pork for 3-4 hours per pound.

Put the baking pan on the top rack and let the pork cook until it’s tender.
