Slow twitch muscles are the most abundant muscle fiber in beef. Slow twitch muscles are responsible for movement, power and endurance. Fast twitch muscles, however, are the ones that deliver energy and give meat a chewy texture. So, before you make your pot roast, it’s important to decide what kind of meat you want to make. In this recipe, I’ll use chuck roast, which is beef round that comes from the shoulder. Although chuck roast is technically a small muscle, it’s still a large muscle. It has a lot of connective tissue and fat that needs to be removed. This is why it’s referred to as chuck.
