Drain the fries in a colander, and rinse them with cold water. Put the fries into a container with the cooking oil. Make sure the oil covers the fries by about an inch. The fries should be covered by at least 1.5 inches of oil. To get the oil hot enough to fry the fries, you’ll need to place the oil over a low heat. Heat the oil over a low to medium-low heat. Make sure that the oil doesn’t get hot enough to smoke. You’ll know the oil is ready when a small amount of potato sticks to the bottom of the frying pan.
