Drain the pasta and add it to the sautéing onion and garlic.
Stir to coat in the oil and salt.
Add the tomato paste and continue to stir for 30 seconds.
Add the basil and stir again.
Add the salt and pepper to the pasta, then add the ricotta and parmesan and stir to combine.
When the pasta has cooled for a few minutes, form it into small balls and freeze.
