I love making duck sauce. I buy duck from my local farmer and then braise it in a roasting pan with onions, garlic, cherry peppers, carrots and other vegetables. After a couple of hours in the oven, I give it a vigorous shake. Then I cover the braised duck with a duck sauce of my own creation. It’s served over pasta or rice. There’s something special about eating duck for the first time. It’s one of those simple pleasures in life.
