What Do I Need?
We’re going to make the classic Mexican dish “chicken pozole.” This is basically pozole without the chicken! The main ingredient is hominy, a dried corn product from the Americas. It’s available in most supermarkets. You can also substitute other dried corn products, such as hominy grits. You can also make this dish without dried corn and use canned hominy instead. Instead of cooking the hominy, you can use instant hominy instead. Instant hominy usually comes in packets and can be found in the international aisle of most supermarkets.
Cooking Tips
For this recipe, you’ll need: boneless, skinless chicken breast; adobo sauce; chicken stock; hot sauce; lime juice; chicken thighs; corn; black beans; and potatoes. Chop chicken breast and cook in adobo sauce. Add chicken stock and lime juice and cook for a few minutes. Add chicken and corn and cook until chicken is cooked through. Add beans and potatoes and cook for 10 minutes. Add hot sauce and cook for 2 minutes.
