[Procedure]: Ingredients 1 onion, chopped finely 1/2 cup milk 1 Tbsp flour 1 cup heavy cream 4 to 6 garlic cloves minced 1-3 Tbsp butter, melted Salt & pepper, to taste
[Steps]: Boil a pot of water. While the water is boiling, steam an onion until completely soft. Allow to cool. Mix in the milk, flour and cream and simmer for 30-40 minutes, stirring frequently. Add the butter and garlic. Whisk until fully combined. Season with salt and pepper.

To make onion sauce as a side dish for tacos, you can make this recipe in the same method but substitute the vegetable broth for chicken broth. If you have leftover onion sauce, you can use it as a topping for scrambled eggs.

Ingredients: 1 small red onion, quartered. 1 Tbsp extra virgin olive oil. 6 cloves garlic, peeled and sliced. 2 Tbsp minced parsley. 1/2 cup sherry vinegar. 1/2 tsp mustard seed. 2 bay leaves. 2 Tbsp unrefined salt. 1/2 cup water. For the base: 2 cups water. 1/2 tsp salt. 1/2 cup dry red wine. 1 cup white wine vinegar. 1/2 cup honey. Optional: 1/4 cup sugar. 1/4 cup plus 1 Tbsp granulated garlic. Method: Prepare a high heat and wait for about 5 minutes. Do not be overcautious. Cover the pot. Add salt and vinegar. Combine everything. Increase the heat to medium. Wait until the wine is boiling and add more water. Then boil for about 5 minutes. Mix. Make sure the water is completely covered. Add sugar, vinegar, and water. Boil until the wine is completely evaporated. Use a hand blender to blend the onion. Add the rest of the ingredients and boil for about 2 minutes. When ready, the sauce is thick and will keep in the refrigerator. Reheat it when you need to use it. You can make this sauce using the other ingredients below, and it can be used with a variety of pasta. You can also add this sauce to salads and soups.
