Injera

Injera is the Ethiopian staple food. It’s a high-fiber, delicious pancake. It’s the closest thing to a yeast bread that is used in the traditional Ethiopian cuisine. Injera is a slightly sour, spongy, leavened bread made from teff flour and water. Injera is most commonly made in a large, low, circular, pancake form. The pancake is cut into wedges and served with a variety of toppings such as cabbage, beef, lentils, or sauce. To make the Injera batter, we use water, teff flour, salt, and yeast. In order to make the Injera batter with water, we mix in the teff flour and salt. After, we let the batter rest for about 10 minutes. We mix in the yeast and water and let that sit for about 10 minutes more. Then, we add the flour to the bowl. Next, we knead the dough for at least 10 minutes until it’s elastic and smooth. After that, we divide the dough into 10 equal pieces. We form the Injera balls and let them rest for at least 15 minutes. We pour oil onto a hot griddle. Then, we place the Injera onto the hot griddle and fry them for about two minutes. We repeat this process with the remaining batter and serve them with your favorite toppings.

3.1 pounds of sugar
0.3 pound of baking soda
2 eggs
1 cup of milk

Add all the remaining ingredients (except for the milk) to the eggs and stir them together. Add the milk to the flour and stir the whole mixture until it forms a sticky ball. You may find it easier to use a stand mixer with a dough hook to do this. The dough will probably be a bit sticky, but it will be ok. [Heading]: Letting The Dough Rise

[Text]: In a large bowl, combine the flour and sugar. Turn your dough out onto the surface. Turn it over, coat it with flour and knead the dough for 2 minutes. Put the dough in a lightly oiled bowl and cover with plastic wrap. Let rise for another 30 minutes at room temperature. Divide the dough into 6 balls and then roll them out into circles on a floured surface. I like to use a 1 inch circle cutter to make the circles. [Heading]: Fry The
