Sourdough Bread Recipe

When I was first considering adding a sourdough starter to my kitchen, I did some research and made a few changes to my standard bread recipe. Instead of using yeast, sourdough bread uses a starter that is similar to starter recipes that you find in breadmaking books. The main difference is that sourdough starters are a combination of flour, water and yeasts. This type of starter is created by blending or “feeding” a culture of yeasts and bacteria. Yeasts convert the starch in the flour into sugars, while bacteria are usually involved in converting the sugar into lactic acid and ethanol. The end result is that the bread tastes better and can last longer. To make my starter, I started with 1/4 cup of flour, 1/4 cup of water, and 1 teaspoon of yeast. I mixed all of these ingredients in a 1-quart glass jar with a screw-top lid and let it sit for four days at room temperature. During this time, I kept the top of the jar loosely covered with a piece of plastic wrap to prevent the wild yeast and bacteria from floating to the top of the jar. After four days, I strained out the starter and added about an ounce of starter to each of my three 1-quart jars. Each jar was then covered with a piece of plastic wrap and left alone for another four days, where they were fed daily.
