To begin, you will need to ensure the leg is ready to cut, by laying it down on a level surface and cutting along the thigh to expose the underside of the leg. Next, cut along the side of the thigh from the tip of the hip down to the blade. Flip the leg so the bone side of the thigh is facing up, and then hold the knife horizontally along the edge of the bone. With your other hand, grasp the wing near the elbow and support it at an angle. Now, with your knife, cut from tip to tip, keeping the angle of your blade a bit higher than parallel to the bone and then pull the wing back. You should now be able to remove the wing easily. Cut through the wing just below the tip of the elbow, near the shoulder, and pull it down. This should remove the wing, leaving the part attached to the shoulder.
