2 medium sized onions
2 medium sized zucchinis
2 medium sized tomatoes
2 large potatoes
1 1/2 cans of cannellini beans (plus the liquid)
8 cloves of garlic
Spaghetti
2 cups of water
1 cup of olive oil
1 teaspoon of oregano
Salt and pepper
Method:
1. Get a large pan and pour in the olive oil. Heat this over a high heat.
2. Chop the onions into large pieces and add them to the pan.
3. Chop the zucchinis into large pieces and add them to the pan.
4. Chop the tomatoes and add them to the pan.
5. Add the water, then the potatoes and the cloves of garlic. Cook the vegetables for around 10 minutes.
6. Once the vegetables are cooked, drain the cannellini beans (plus liquid) and add them to the pan.
7. Cook the beans for 10 minutes, then drain them and add them to the pan.
8. Cook the sauce for around 20 minutes, mixing it constantly to avoid it sticking to the bottom of the pan.
9. Once the sauce has been cooking for 20 minutes, salt and pepper the mix to taste and add in the oregano.
10. While the sauce is cooking, cook the spaghetti in a large pot of boiling salted water for 10-12 minutes.
