What is the secret to Southern fried chicken?

If you are unsure whether the exterior is done or not, try cooking it until it reaches 165 °F and checking again. Once you get the right internal temp, check the rest of your meal. For example, if the sauce is too hot, add a little more sauce than you think it needs. And if it seems too dry, pour some more water into the pan. After all, moisture is what makes a dish moist.
Do you season the chicken or the flour?
Some people seasons the birds, dust them in flours, I prefers to sprinkle the seasoning on before putting the whole bird in my bag. Then I add everything else, including the salt, spices and chicken. If you don‘t want to do this, you could simply put the entire bird into a bag and let it dry out completely. Once it has dried out, cut it open and remove the meat. You can then season it again.
