If you do not dry the chicken enough, the fat will melt and leave the meat wet. This can cause the meat to taste bad. If you are using a smoker or grill, you should first heat it up to the smoking temperature before putting the meat in. To tell if it is smoking, you should remove the chicken, then cover the grill to block the heat. Remove the cover and observe if there is a thick smoke in the area where you can see the meat. You will know that it is smoking when the smoke will be in the same spot. If you have a microwave, you can use the microwave to dry the chicken.
