Ingredients 2 small pork tenderloin- 4-6 ounces each 1/4 cup of flour 1/4 cup of cornstarch 2 tsp of baking powder 1 tsp of salt 1/2 tsp of black pepper. For the marinade mix 2 tsp of white vinegar and 1 tsp of brown sugar in a bowl. Place the tenderloin in a baking dish. Cover it with the marinade and put it in the fridge overnight. Preheat the oven to 375F. Remove the tenderloin from the marinade. In a small bowl mix the flour, cornstarch, baking powder, salt, pepper, and a pinch of black pepper. In a separate bowl mix the marinade and add the mix to the dry ingredients. Put the tenderloin in the dry mix and cover with the rest of the marinade. Coat it all in the dry mix and bake for 40 minutes. Remove from the oven and let it sit for 10 minutes.
